Succulent Slow Roasted Pork Belly

Method

Step one

Remove the pigskin from your pork belly and set aside (Perfect for crackling).

Lavishly season both sides with salt & pepper and leave to cool to room temperature.

Preheat your oven to 100°C/200°F.


Step two

Wrap your pork belly in a couple sheets of aluminum foil; creating a neat parcel with the fat side up.

Cook in the oven for five and a half hours.


Step three

Remove from the oven and let cool before placing in the fridge.

After chilled, unwrap the parcel and cut into serving portions.


Step four

Peel, halve and boil your potatoes.

Mash with butter & cream.


Step five

When potatoes & applesauce are ready, brown your servings in fat before serving.
